Hoje existem poucas amendoeiras, mas nos tempos idos quando grandes extensões estavam cobertas por amendoeiras, aquando da sua floração, entre dezembro e fevereiro (dependendo das condições climatéricas de cada ano), os campos pareciam cobertos de neve.
Em Portugal, a região do nordeste transmontano, também é muito rica em amendoeiras.
Conta a lenda que quando na região do Algarve (Al-Gharb) reinava o rei Ibn-Almundim com a sua mulher nórdica (sua ex-prisioneira) que ficou doente sem causa aparente, o rei procurou todos os remédios sem sucesso. Um velho prisioneiro, proveniente da mesma região, disse ao rei que o mal da rainha era a saudade da neve do seu país e assim o rei mandou plantar os campos com amendoeiras para que todos os anos a rainha, da sua janela, revivesse as suas memórias do país longínquo.

A amendoeira (Prunus dulcis, antes classificada como Prunus amygdalus) é uma espécie de árvore de folha caduca. A parte comestível, a amêndoa é a semente do seu fruto, geralmente designada de fruto seco, como outras sementes comestíveis do mesmo tipo, como o pinhão, a avelã e a noz.
É também incluída no grupo de alimentos oleaginosos, pelo que, de acordo com a Associação Portuguesa de Nutricionistas só devem ser ingeridas 30 g por dia. Ainda de acordo com a mesma associação, as amêndoas são ricas em gordura predominantemente insaturada, constituem uma excelente fonte de α-tocoferol (vitamina E), manganês, magnésio, cobre, ferro, fósforo, fibra alimentar, vitamina B2 e proteínas. São igualmente ricas em fitiquímicos, como ácido fenólico e fitoesteróis.

As amêndoas podem ser consumidas cruas com ou sem casca, em saladas, crumbles salgados ou doces, como aperitivo com sal, piri-piri e outros condimentos e sobretudo na pastelaria, em sobremesas, bolachas, biscoitos e bolos. São usadas para as tradicionais “amêndoas da Páscoa”.
Faz-se atualmente “leite” ou bebida de amêndoa para pessoas intolerantes à lactose e farinha de amêndoa que é utilizada em substituição da farinha e trigo junto com outras farinhas sem glútem para pessoas intolerantes ao glútem.


BATATA-DOCE GRATINADA COM MEL E AMÊNDOAS

Lavar as batatas e cozer em água e sal. Quando cozidas, escorrer e cortar ao meio Retirar um pouco do interior e guardar.
Num tacho estufar a cebola, o alho francês, o alho e o azeite. Quando alourar juntar a amêndoa e o interior da batata.
Rechear as batatas.
Dispor o mel por cima e levar ao forno a gratinar.

Bata as claras com o açúcar até ter um merengue consistente. Junte a amêndoa e envolva.
Coloque colheradas da mistura num tabuleiro de ir ao forno forrado com papel vegetal.
Coze 1 hora a 120ºC.
Retire do forno e descole do papel. Guarde em caixa com tampa hermética.

Almond trees, the snow of Algarve  

Today there are few almond trees, but in the old days when large fields were covered with almond trees, by the time they bloomed, between december and februery, the field seemed covered with snow.

There is a story about the arabe king, Ibn-Almudim, when Algarve was called Al-Garb. He had a nordic wife (her former prisoner) who became ill without apparent cause.
An old prisoner, from her land, told the king that the queen´s illness was longing for the snow of her country and so the king order the plantation of almond trees throuh the fields, so that every year the queen, from her window, could relive her memories of her distant country.

The almond tree (Prunus dulcis, formerly classified as Prunus amygdalus) is a species of deciduous tree. The edible part, the almond, is the seed of its fruit, generally called dried fruit, like other seeds of the same type, such as pine nuts, hazelnuts and walnuts.

The almonds are also included in the oilseed group, so, according to the Portuguese Association of Nutritionists, only 30 g per day should be ingested. Still according to the same association: the fat present in amonds is mainly unsaturated, they are an excellent source of α-tocopherol (vitamin E) and manganese, magnesium, copper, iron, phosphorus, dietary fiber, vitamin B2 and proteins.

Almonds can be eaten raw with or without skin, in salads, savory or sweet crumbles, as an appetizer with salt, piri-piri and other spices and specially in pastry, desserts, cookies and cakes. In portugal they are used for traditional “Easter almonds”. An almond drink is currently made for lactose intolerant people and almond flour which is used with other gluten-free flours for intolerant to gluten people.


GRATINATED SWEET POTATOES WITH HONEY AND ALMONDS

Wash the potatoes and cook them in salted water.When cooked, drain and cut them in half.
Remove some of the interior and store. In a pan, stew the onion, leek, garlic and olive oil. Add the almond and the interior of the potato. Stuff the alfs of the cooked potatoes with this mixture. Place the honey on top and bake in the oven.

Beat the egg whites with the sugar until you have a consistent meringue. Add the almond and wrap.
Place spoonfuls of the mixture on an oven tray lined eith parchment paper. Cook 1 hour at 120ºC. Remove from the oven and peel of the paper. Store in a box with airtight lid.
